BREAKFAST BOWL
½ cup quinoa, rinsed
2 eggs
1 tablespoon olive oil
4 thick slices halloumi
sea salt and freshly ground black pepper to taste
4 large field mushrooms, sliced
120g spinach
1 avocado, peeled and sliced
10 cherry tomatoes, halved
1 Lebanese cucumber, peeled into ribbons
2 tablespoons Hummus
1 tablespoon each toasted pine nuts, sliced almonds and pumpkin seeds juice of 1 lime
Bring a large saucepan of water to the boil. Add the quinoa and cook, stirring occasionally, for 12–15 minutes. Drain, rinse and drain well again. Bring a small pot of water to the boil. Reduce
