A meal from Anna Jones’ latest recipe book, One Pot, Pan, Planet. This cook book has been getting a bit of buzz for its focus on environmental impact (it’s completely vegetarian and largely vegan), but it’s also a joy to cook from because it’s so bloody simple, with minimal washing up required and maximum flavour easily achieved. We can recommend in particular an eggplant curry which uses peanut butter to achieve an astounding depth of flavour — don’t knock it till you’ve tried it. A great book for home cooks just starting out, or for more experienced cooks wanting to scale back the effort on a Wednesday night.
