WINTER KITCHEN WONDERLAND

PEAR AND MINCEMEAT CAKE

A truly Christmassy tasting cake that is sure to get anyone in the festive mood

SERVES 8

Preparation time: 20 minutes

Cooking time: 50 minutes

■ 150g/5¼oz butter
■ 150g/5¼oz caster sugar
■ 2 eggs
■ 150g/5¼oz ground almonds
■ 150g/5¼oz self-raising flour
■ ¼ tsp almond extract
■ 225g/8oz mincemeat
■ 1 large pear, peeled and chopped
■ 2 tbsp flaked almonds
■ 1 tbsp icing sugar for dusting

1. Pre-heat the oven to 180C/fan 160C/ gas 4 and line a loose-bottomed 20cm/8in cake tin.

2. Beat the butter and sugar together until light and fluffy, roughly 3-5 minutes.

3. Add the eggs, ground almonds, flour and almond extract and mix together until just combined.

4. Add the pear and fold through.
