The red, or white, of it

I WAS baffled. There I was, idly making a few mental notes on the sun-dappled terrace of Artelium, a new winery in a glorious spot overlooking the South Downs near Ditchling, East Sussex. I had just drained my glass of excellent 2014 Artelium Curators Cuvée fizz when owner Mark Collins sidled up and wafted a well-chilled glass of still white wine under my beak, challenging me to guess what it was.
