Mashed Potato Croquette

MAKES 8

Mashed potatoes are tasty in any form or fashion, and these fried delights are no exception.

Vegetable oil
2 cups cold thick mashed potatoes
3 large eggs, divided
1 tablespoon thinly sliced fresh chives
1 teaspoon kosher salt
¼ teaspoon ground black pepper
1 cup all-purpose flour
1 tablespoon water
1½ cups panko (Japanese bread crumbs)
Garnish: sliced fresh chives

In a large Dutch oven, pour oil to a depth of 2 inches; heat over medium heat until a deep-fry
