BERRY NICE TREATS

Lemon Tart with Raspberry Ripple Cream

Serves 8-10, Prep and Cook 1 hour, 10 mins

250g packet Nice biscuits
2 tblsps desiccated coconut
125g unsalted butter, melted

FILLING

5 eggs
¾ cup caster sugar
2 tsps finely grated lemon rind
½ cup fresh lemon juice
300ml tub thickened cream

RASPBERRY RIPPLE CREAM

125g punnet raspberries, plus extra to serve
¹/³ cup icing sugar mixture, plus extra to serve
300ml thickened cream

Lightly grease a 24cm round x 3.5cm deep loose-based flan tin (base measures 23cm). Line
