ASIAN AVO AND SORGHUM SALAD
The combination of avocado and sorghum makes this a satisfying and wholesome dish. Leaving it in the fridge for a bit will make it even tastier – but make sure you add the lettuce just before serving.
SERVES 4-6 AS A LIGHT MEAL PREPARATION: 15 MIN MARINATING: 30 MIN
SALAD
750ml (3c) sorghum, cooked, well drained and cooled
1 cucumber, diced
100g toasted almonds, coarsely chopped or whole (optional)
4 spring onions, chopped
1 red onion, diced
2 avocados, cubed
handful of fresh coriander, chopped
DRESSING
60ml (¼c) strong rooibos tea
125ml (½c) olive oil
juice of 2 lemons or 60ml (¼c) rice wine vinegar
10ml (2t) brown sugar
15ml (1T) fish sauce (optional)
2 garlic cloves, finely chopped
5cm fresh ginger, grated
1 red chilli (optional)
60ml (¼c) sesame seeds, toasted
TO SERVE
1 head of lettuce of your choice1 avocado, sliced and drizzled with a little lemon juice or
