Makes 9 large, or 16 small
FOR THE SHORTBREAD BASE
⁕ 200g butter, softened, plus extra for greasing
⁕ 100g caster sugar
⁕ 300g gluten-free plain flour
⁕ ¼ tsp xanthan gum
FOR THE CARAMEL LAYER
⁕ 185g butter
⁕ 35g golden caster sugar
⁕ 65g golden syrup
⁕ 1 x 397g can
