When we did these baked eggplants in our summer salads workshop, it was always everyone’s favourite dish of the night. Eggplant is an amazing meaty vegetable that takes on almost any flavour profile you pair it with.
Pomegranate molasses is a Middle Eastern ingredient with a unique, punchy, tangy-sweet flavour. The fresh lemon yogurt is a must as it brightens and lifts the caramelised baked eggplants for a party in your mouth. They are amazing served with salmon or lamb.
THYME AND POMEGRANATE-BAKED EGGPLANTS WITH LEMON YOGURT
2 eggplants, cut in half lengthways
oil
1 tbsp pomegranate molasses
2 tsp sea salt
3 sprigs thyme, stalks removed
LEMON YOGURT
¼ cup plant-based or dairy yogurt
juice of ½ lemon
pinch of sea salt
