make your own fortune cookies!

Makes 8-10 cookies

You will need:

 1 egg white from a large egg
 1/8 tsp vanilla extract
 1/4 cup all-purpose flour
 1/4 cup granulated white sugar
 1/4 tsp vegetable oil
 2 tsp water

Step 1.

Preheat oven to 200°C/400°F/ Gas Mark 6. In the bowl, add egg white and vanilla. Using a whisk or stand mixer, beat until white and foamy but before soft peaks form. This should only take 30 seconds. Add oil and water to the egg mixture. Quickly mix to combine.

Step 2.

In a separate bowl, sift together sugar and flours. Add this dry mix to the egg mixture. Using a spatula, gently fold together ingredients to combine. The consistency should be thick but pourable, like a crepe batter. If it’s too thick you can add a little
