Prawn noodles

Instead of prawns, you could use leftover chicken or lean meat from your Sunday roast – just add at the end and heat through.

■ Serves 1 ■ Prep 20 mins ■ Cook 5 mins

1 nest wholemeal noodles
2 garlic cloves, finely grated
½ tbsp finely grated ginger handful of coriander, leaves and stalks separated and chopped
½-1 red chilli, thinly sliced and seeds removed
1 tbsp tamari
3 spring onions, sliced at an angle handful of sugar snap peas
2 handfuls of beansprouts
50g king prawns
½ lime, zested and juiced
