¼ cup sugar
1½ tablespoons kosher salt
1 tablespoon baking powder
1 (0.25-ounce) package instant yeast
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
2 cups warm whole buttermilk (120° to 130°)
1 large egg
1 tablespoon water
