MAD FOR MINCE

Vietnamese Pork Banh Mi Rolls

Serves 4, Prep and Cook 40 mins

2 x 30cm baguettes
1 Lebanese cucumber, cut into thin strips
1 large carrot, coarsely shredded
Mayonnaise, hoisin sauce and sliced red chilli, to serve

PATTIES

500g pork mince
¼ cup dried breadcrumbs
2 green spring onions, finely chopped
3 cloves garlic, crushed
1 tblsp fish sauce
1 tblsp lemongrass paste
¼ cup finely chopped fresh coriander stems, plus leaves to serve

1 To make patties, place all ingredients in a large bowl. Mix with clean hands until well combined. Refrigerate for about 1 hour, or until firm.

2 Divide mixture into 12 portions. Shape into patties. Flatten slightly.

Heat a lightly oiled, large, non-stick frying pan over medium heat. Add patties in two batches. Cook, turning frequently, for about 8 minutes, or
