Smashed potatoes with herbs & green olives

SERVES 4 PREP + COOK TIME 20 MINS

600g potatoes, scrubbed, coarsely chopped
2 tablespoons finely chopped mint
2 tablespoons finely chopped curly parsley
2 tablespoons finely sliced chives
¼ cup (60ml) extra virgin olive oil
2 teaspoons lemon juice
10 green olives, pitted, coarsely chopped
mint leaves, lemon cheeks, to serve

1 Place potatoes into a large saucepan and cover with cold water. Bring to the boil, cooking for 15 minutes or until the potatoes are tender.

2 While the potatoes are cooking, place the herbs, oil, lemon juice and olives in a bowl, stirring to combine. Season with sea salt and ground white pepper.

3 Drain cooked potatoes and place them in a large bowl. Roughly smash them with a fork. Stir through herb mixture.

4 Serve potatoes topped with extra mint leaves and with lemon cheeks.
