Rocky road

MAKES 9

150g (5½ oz) dairy-free margarine
2 large bars of Nomo Choc chocolate, any flavour
 60g (2oz) gluten and dairy-free rich tea biscuits
60g (2oz) glace cherries, halved
marshmallows, as many as you like (we used Freedom Mallows)
2 tbsp golden syrup (optional)
dates, pitted, chopped (optional)

1 Line a baking tray or any rectangular dish with parchment paper.

2 Melt the margarine and all of the chocolate together in a bain-marie, or for 30-second bursts in a microwave until it's all melted. (If you have an extra sweet tooth, melt the golden syrup here as well if you choose to include it).

3 Let the chocolate cool a bit (the marshmallows will melt otherwise!). Meanwhile, smash up the biscuits and halve the cherries.

4 Once the melted chocolate mixture is cool, fold in the smashed biscuits, halved cherries and marshmallows. You can add whatever you want here: dates work well!
