LET’S FLY!

QUICK ROCKET SALMON TART

This is a quick tart to put together and also fast to cook. It’s great as a starter when entertaining, or serve at a relaxed garden lunch with a salad.

SERVES 4-6

Preparation time: 15 minutes

Cooking time: 25 minutes

■ 1 roll puff pastry
■ 1 leek, washed and chopped
■ 1 tbsp olive oil
■ 1 large egg
■ 200g/7oz crème fraîche
■ 200g/7oz smoked salmon
■ 4-5 good handfuls rocket
■ 1 handful dill, chopped

1. Preheat oven to 200C/fan 180C/gas 6. Line a baking sheet with baking paper and roll out the pastry on to it.
