Roasted Onion and Bread Salad

INGREDIENTS
2 large red onions, each cut into 8 segments
2 tbsp extra-virgin olive oil, plus extra if needed
1 tbsp balsamic vinegar, plus extra if needed
3 thyme sprigs
Sea salt 2-3 slices of day-old sourdough or crustybread (about 150g), torn into 3 pieces
30g (¼ cup) walnuts
