CREME CARAMEL
MAKES 4 PREP 15 MINS + STANDING COOK 1 HOUR 40 MINS
• 3 eggs
• ¼ cup caster sugar
• 1 tsp vanilla bean paste
• ¾ cup milk
• 1 cup thickened cream
CARAMEL
• ¾ cup caster sugar
• ¹/ ³ cup water
1 Spray 4 x 200ml-capacity ramekins with cooking oil spray. Place into the bowl of a 5.5-litre slow cooker.
2 CARAMEL In a small saucepan, stir sugar and water over low heat until sugar is dissolved. Bring to boil. Boil, without stirring, for 8-10 mins or until mixture is golden. Divide immediately among prepared ramekins. Stand until set.
In a small bowl of an electric mixer, beat eggs, sugar and vanilla 3 mins on medium, or until smooth. Stir in milk and cream. Strain into a large jug. Stand 10 mins to allow foam to settle.
