CHICKEN
5 cups self-rising flour
3 tablespoons plus 1 teaspoon kosher salt, divided
2 tablespoons ground black pepper, divided
2 cups whole buttermilk
2 large eggs, lightly beaten
2 pounds chicken cutlets
Vegetable oil, for frying
GRAVY
¼ cup reserved hot cooking oil
¼ cup reserved flour mixture
2 cups whole milk
