Summer dinner party FOR FRIENDS
PRAWN TOAST BITES
These tasty morsels are sure to receive compliments from your guests.
MAKES 30
✣ 1 egg, separated
✣ 6 slices medium white bread
✣ 30g (1oz) sesame seeds
✣ Vegetable or sunflower oil, for shallow frying
✣ Plum dipping sauce, to serve
For the filling:
✣ 150g (5oz) raw prawns
✣ 2 salad onions, chopped
✣ 15g (½oz) coriander, reserving some for garnish
✣ 2cm (¾in) piece of fresh ginger, peeled and finely grated
✣ 1 garlic clove, crushed
✣ 1tsp white miso paste
✣ ½tsp oyster sauce
1 Put the filling ingredients and the egg yolk into a food processor. Pulse until the mixture is chopped into small pieces but still a bit chunky.
2 Spread the mixture over 3 of the slices of bread, leaving a small gap around the edges. Top each with a second slice and pinch the edges together.
