Summer dinner party FOR FRIENDS

PRAWN TOAST BITES

These tasty morsels are sure to receive compliments from your guests.

MAKES 30

1 egg, separated
6 slices medium white bread
30g (1oz) sesame seeds
Vegetable or sunflower oil, for shallow frying
Plum dipping sauce, to serve

For the filling:

150g (5oz) raw prawns
2 salad onions, chopped
15g (½oz) coriander, reserving some for garnish
2cm (¾in) piece of fresh ginger, peeled and finely grated
1 garlic clove, crushed
1tsp white miso paste
½tsp oyster sauce

1 Put the filling ingredients and the egg yolk into a food processor. Pulse until the mixture is chopped into small pieces but still a bit chunky.

2 Spread the mixture over 3 of the slices of bread, leaving a small gap around the edges. Top each with a second slice and pinch the edges together.

3 Beat the egg white and pour onto a plate. Dip one side of each sandwich into it and scrape off any excess. Put the sesame seeds on a
