LIFTING THE SPIRITS

ewis Mackenzie takes a few deep breaths before he starts work in the morning. He fills his lungs with fresh Outer Hebridean air and then plunges into the sea kelp forest off the coast of Tarbert, the harbour town and business hub of the Isle of Harris, off the west coast of Scotland. He works for the Isle of Harris Distillery and is its chief (and only), the hero ingredient in the island’s award-winning craft gin.
