Herb and walnut crumbed fish with pickled red cabbage

SERVES 2

I love this delicious crumb on the fish. You can also try it with a Cajun spice blend or garam masala spices.

YOU WILL NEED

For the pickled red cabbage:160g red cabbage, very thinly sliced3tbsp white wine vinegar1tsp fennel seeds1tbsp honey or sugar50ml boiling water60g walnut pieces1tsp dried oregano1tsp dried1tsp dried chilli flakes40g fine wholemeal breadcrumbs2 x 175g skinless white fish fillets4tbsp extra-virgin olive oil, plus extra for drizzling160g frozen peas, defrosted50g lamb’s lettuceSeasalt and ground black pepper
