This is the Grande Boucle of salads, the most lauded, the most fought over, the most French.
Essentially ‘salad in the style of Nice’, got its start in the packed lunches of fishermen on the Côte d’Azur, a sandwich of elderly baguette rubbed with garlic, moistened with olive oil and stuffed had evolved into a plated salad found on Provençal menus, and it soon became a celebrated – and hotly contested – dish.
