Marvellous MINCE

MEATBALL PASTA BAKE

SERVES 4 PREP AND COOK: 35 MINS

300g elbow pasta
400g pkt beef meatballs
1 large onion, finely chopped
700g jar tomato pasta sauce
400g can chopped tomatoes
1 tsp dried oregano
100g grated mozzarella cheese

1 Cook pasta in a stockpot of boiling, salted water until tender. Drain.

2 Meanwhile, heat an oiled large, frying pan over medium heat. Add meatballs in two batches. Cook turning occasionally for about 4 minutes, or until browned. Drain on absorbent kitchen paper.

3 Add onion to the same pan over high heat. Cook, stirring until soft. Add pasta sauce, tomatoes and oregano. Season with salt and pepper. Reduce heat to medium and cook for about 5 minutes, or until sauce is thickened slightly. Remove from heat. Stir in meatballs and pasta.

4 Spoon into a large ovenproof dish (10-cup capacity). Sprinkle over the mozzarella.

5 Cook in a hot oven (200°C) for about 20 minutes, or until the cheese is golden brown and the meatballs are cooked.

6 Serve bake with crusty bread, if desired.
