Spaghetti with sweet onion, courgette and basil

A friend from Naples described this dish to me – it’s served in his favourite restaurant during summer, when courgettes are in abundance. He explained it in such detail and with such passion that I starting salivating at the thought of it, so the following day I tried it out. Wow! The combination of ingredients is magnificent. Cook the onions and courgettes really slowly, and cook them separately to allow them to develop their own natural sweetness. It’s essential to mix the egg yolks with the pasta water, otherwise the dish will look like scrambled eggs.
