Merrick: I make pappardelle with my kids. I roll it out, then I give them a 1.25L bottle of Coke and I leave. Then I come back – it’s like The Hunger Games – and whoever survives gets to eat the pappardelle.
There are a lot (low-growing vegetation on the Mediterranean limestone hills) in France and Northern Italy, so nebbiolo from up that way. The wine has a wonderful array of spice and herbal character. Sangiovese and lamb work well as well.
