Blueberry Pecan Cake with Custard Cream

 Serves 8, Prep and Cook: 1 hour, 20 mins

1 cup pecans
1½ cups firmly packed brown sugar
1 cup plain flour
1 cup self-raising flour
3 tsps ground ginger
125g cold unsalted butter,
chopped
300ml tub light sour cream
1 egg, at room temperature
1 tsp bicarbonate of soda
125g punnet blueberries
300ml tub thickened cream
½ cup thick vanilla custard

Grease a 20cm round cake pan. Line
