Mix and mash

The potato is one of our most popular vegetables, with 525,000 tonnes grown annually. There are more than 50 varieties commonly available, including russett burbank, innovator, rua, nadine, agria, moonlight, desiree, ilam hardy and red rascal.

For this easy-to-make potato hash, use agria, rua or red rascal. It can be served as either a delicious brunch or a main course, accompanied with salad of your choice. For extra flavour, add crushed garlic and a sprinkling of dried chilli flakes at the same time as the onion and herbs.
