Rosemary, garlic and fennel roast pork

▶SERVES 4-6 ▶PREPARATION 20 minutes ▶ COOKING 2 hours
Fragrant rosemary, aromatic fennel and tasty garlic combine to good effect in this simple but flavourful roast pork dish.
• 1.8kg pork loin, skin scored for crackling, chined
• 1 tbsp fennel seeds
• salt and freshly ground black pepper
• 1 tsp olive oil
• 2 garlic cloves, peeled and cut into slivers
• 3-4 rosemary sprigs, chopped into short pieces
1 Bring the pork to room temperature. Preheat the oven to 220°C/Gas Mark 7. Dry-fry the fennel seeds until fragrant, then cool and finely grind.
