MUSHROOM MILLET SALAD WITH HERBS AND FETA
SERVES 2 (OR 4 AS A SIDE)
◆ 250g oyster mushrooms (or any large mushrooms)
◆ Olive oil
◆ A few sprigs thyme
◆ 1 tsp cumin seeds
◆ 2 red onions, sliced into wedges
◆ 2 cups cooked millet
◆ 100g feta (or goat’s cheese or vegan feta), chopped
◆ Flat-leaf parsley, chives or dill leaves, for garnishing
◆ Salt and freshly ground black pepper
FOR THE DRESSING
◆ 1 tbs balsamlc vinegar
◆ 1 tsp honey
◆ 2 to 3 tbs olive oil
1. Preheat the oven to 200˚C.
Slice mushrooms lengthways and lightly score them in a criss-cross pattern. Sauté the mushrooms in a large pan with olive oil, thyme and the cumin seeds. Once cooked, remove from the pan and set
