Scallops with vermicelli
Serves 4
1 tablespoon oil
2 tablespoons butter
12 scallops, skirts removed
Salt and pepper to taste
3 tablespoons peanut oil
3 garlic cloves, chopped
4cm piece ginger, chopped
1 large red chilli, seeds removed, finely chopped
2 spring onions, chopped
150g vermicelli, cooked as per packet instructions
1. Heat a large frying pan over a high heat. Add oil and butter.
