Piece of cake

Gluten-free chocolate and plum cake

Serves 10-12

The main feature of this cake is not that it’s gluten free, nor that it is studded with deliciously tangy plums. It’s that it somehow manages to be light and rich at the same time. Serve it warm for a perfect dessert.

100g butter
100g dark chocolate (at least 65% cocoa), chopped
4 medium eggs
1 cup caster sugar
1 cup ground almonds
3 black Doris plums (fresh or tinned), drained, halved and stones removed
Cocoa and icing sugar for dusting
Whipped cream to serve
Edible flowers to garnish (I used violets and calendula)
