Mexican Prawn Fajitas with Mango Salsa
Makes 10, Prep and Cook: 30 mins
500g raw peeled prawns (30)
2 tblsps fajita seasoning
2 tblsps olive oil
2 green capsicum, thinly sliced
1 onion, thinly sliced
10 mini flour tortillas, warmed
Chipotle mayonnaise, shredded iceberg lettuce, sliced avocado and lime halves, to serve

2 small-medium mangoes (350g each), finely chopped2 tomatoes, deseeded, finely chopped1 long red chilli, deseeded, finely2 tblsps finely chopped fresh coriander1 tblsp lime juice
