YOUR BASE RECIPE
Falafel with tahini sauce
PREP 30 minutes + 12 hours soaking COOK 30 minutes MAKES 45 balls
YOU WILL NEED
✔ 500g dried chickpeas ✔ 1 bunch fresh parsley ✔ 1 bunch fresh coriander ✔ 1 medium onion, coarsely chopped ✔ 2 garlic cloves ✔ ½ green chilli pepper, deseeded ✔ ½ tbsp ground cumin ✔ 1 tbsp salt ✔ 1¼ tbsp ground coriander ✔ 1 tsp baking soda ✔ 1 tbsp sesame seeds ✔ ½ tbsp nigella seeds ✔ Oil, for frying ✔ Tahini sauce, to serve
1 Rinse the chickpeas thoroughly. Place in a bowl, add water to cover by at least 5cm and soak in the fridge for 12 hours. Drain and rinse the chickpeas.
