GLUTEN-FREE BAKING
Gluten-free bread & butter pudding
SERVES 6
2 x Promise Gluten Free Brioche Loaf
butter, to spread
600ml (20floz) milk
400ml (14floz) cream
4 free-range eggs
1 tsp vanilla extract
150g (5½ oz) caster sugar
grated zest of 1 orange
1 Preheat the oven to 180°C/Gas Mark 4.
2 Discard the ends of the loaves and butter the slices.
3 Pour the milk and cream into a saucepan and warm over a gentle heat.
4 Whisk together the eggs, vanilla and sugar until pale, then pour the warm milk and cream mixture over.
5 Arrange the bread in an oven dish, overlapping them to fit. Pour over the custard and leave to sit for 15 minutes. Place the dish in a larger oven dish, then fill with boiling water to come up to halfway.
6 Sprinkle on the orange zest, cover with tin foil, then bake in the oven for 30 minutes.
7 Remove the foil and bake for another 15 minutes. Serve while hot.
