Rockmelon with shanklish

SERVES 6 // PREP TIME 10 MINS

½ rockmelon, deseeded, cut into wedges Extra-virgin olive oil, for drizzling 200 gm shanklish (see note), crumbled 1 small white onion, very thinly sliced Toasted sesame seeds, to serve

1 Arrange rockmelon on a serving plate and drizzle with oil. Sprinkle with shanklish, onion and seeds to serve.

Note Shanklish, a hard sheep’s milk cheese coated in za’atar and spices, is available from Middle Eastern grocery stores. If unavailable, substitute feta.

1 red capsicum, finely diced
