All you need to do is pick up festive fab food that just needs a zhoosh and your catering is done. And the best bit? No one will ever guess you didn’t make these drool-worthy dishes from scratch. It’s party time!

INDIVIDUAL ETON MESS
Preparation time 10 mins

Serves 6
2 cups frozen raspberries
600ml thickened cream
2 tsp vanilla bean paste
500g Coles pavlova
250g punnet strawberries, sliced
Rose Persian fairy floss, to serve
STEP 1 Set aside 1 cup frozen raspberries and allow to thaw, then roughly mash with a fork.
STEP 2 In the large bowl of an electric mixer, beat cream and vanilla until soft peaks form. Gently swirl mashed raspberries through (don’t overmix).
STEP 3 In 6 x 375ml capacity glasses, layer cream, torn pavlova, remaining raspberries and strawberries. Repeat layering and top with fairy floss. Serve.
COOK'S TIP
To add a li.le crunch factor to your Eton mess, substitute the store-bought pavlova with store-bought meringues instead.
