Spiral’s reopening for patrons in early October was met with excited glee from regulars who have long awaited to savor the hailed buffet’s fare once again, myself included. It may have taken a longer wait for Sofitel’s signature restaurant to open compared to other dine-in establishments, but the extended pause was well worth it as they’ve showcased a fully realized system of safety that assures sanitation for all while still maintaining the quality taste of their dishes. I spoke with Sofitel’s F&B Director, Anne-Sophie Hurtaud, and newly appointed Executive Chef, Bettina Arguelles on just what went into the planning and execution
