Cookie monster cheesecake
SERVES 12
For the cookie base
175g (6oz) light brown sugar
135g (4½oz) unsalted butter
1 tsp vanilla extract
200g (7oz) self-raising flour
1 large free-range eggs
1 tsp cornflour
300g (10½oz) chocolate chips
150g (5½oz) M&Ms
For the cheesecake
550g (1lb 2oz) soft cheese
175g (6oz) icing sugar
300ml (10floz) double cream
1 tsp vanilla extract
300g (10½oz) chocolate chips
300g (10½oz) M&Ms
For the chocolate ganache
200g (7oz) milk chocolate
200ml (7floz) double cream
For the decoration
300ml (10floz) double cream
2 tbsp icing sugar (optional) chocolate chips

1 Grease a 20cm (8in) cake tin and leave to one side. Preheat the oven to 180ºC/Gas Mark 4.
To make the cookie base, mix together the brown sugar and unsalted butter until combined. Add the vanilla, flour, egg and cornflour and mix again until all the ingredients are combined. Fold through the chocolate chips and M&Ms
