POTATO BAKE
SERVES 6 PREP + COOK 1 HOUR 40 MINS
• 6 large red royal potatoes, unpeeled
• 3 small sweet potatoes
• 100g butter, melted
• 2 tbsp finely chopped rosemary, plus extra sprigs to serve
• 2 garlic cloves, crushed
• 1 cup chicken stock
1 Preheat oven to 180°C. Grease a 3-litre baking dish.
Slice red royal potatoes into 2mm-thick slices (a mandoline is good for this). Peel and finely slice sweet potato the same width. Combine potatoes in a bowl with combined butter, rosemary and garlic. Season. Arrange potato slices in small stacks, then transfer to dish, standing on their side. Season. Pour over stock. Cover with
