SMASHED BROAD BEANS ON TOAST
Serves 2
■ Cooked broad beans 40g
■ Garlic clove 1, chopped
■ Lemon ½, zested and juiced
■ Olive oil splash
■ Salt and pepper, to taste
■ Sourdough slices 2, toasted
■ Chilli flakes a pinch, optional
1 In a food processor, lightly blitz the broad beans. Then, add the garlic, lemon zest and juice with a dash of olive oil and some seasoning, and blitz again.
2 Spoon the beans on to the toasted sourdough, sprinkle with chilli flakes.
