Caramelised onion & capsicum strata

This is a great recipe to use up leftover stale bread, and while we suggest using sourdough, any type will work well in this recipe. To increase the vege quota, serve this savoury bread pudding with a mixed green salad.

2 tbsp olive oil
2 onions, thinly sliced
3 tsp finely chopped rosemary
8 eggs
2 cups milk
1/3 cup finely grated Parmesan
4 pieces drained roasted red capsicum, thinly sliced
2 tbsp almonds, coarsely chopped
500g sourdough bread, torn into bite-sized pieces
500g cherry truss tomatoes
¼ cuploosely packed basil leaves
