We’re heading into high season for roasting. Be prepared with a pan that has all the right stuff.

ROASTING PANS ARE PRETTY STRAIGHTFORWARD — their main purpose is as a vessel for roasting meat. But they should also be capable of standing up to stovetop use for searing, as well as making sauce and gravy. We use roasting pans in the Test Kitchen all of the time. Here are some important things we’ve found to keep in mind when selecting a pan.
