SWEET DREAMS

“The first time I remember tasting a cream liqueur, it was a homemade lemon cream made by a friend’s grandfather,” says Allison Kave, cofounder of Butter & Scotch, a bar and bakery in Brooklyn, New York. “It absolutely blew my mind. It was so sweet and creamy, but also vibrant and bright.”

Today, Kave celebrates cream liqueurs, mixing them into boozy hot chocolates, velvety flips and more adult treats.

This comforting, guilty-pleasure category was pioneered by Bailey’s Irish Cream in the early 1970s. It was reinvigorated in 2009, with the introduction of Rumchata, a liqueur inspired by the spiced rice-
