Rhubarb crumble cake

We’ve turned the classic pudding into a cake – it’s sure to impress!
You will need
For the crumble
✽ 100g cold butter, cubed
✽ 100g plain flour
✽ 100g demerara sugar
✽ 100g skin-on almonds, chopped
✽ 400g pink rhubarb, chopped into 5cm pieces
✽ 30g caster sugar
✽ Zest of 1 orange
For the cake
✽ 175g soft butter, plus extra for greasing
✽ 200g caster sugar
✽ 1tsp vanilla paste
✽ Zest of 1 orange
✽ 4 large eggs
✽ 175g plain flour
✽ 1tsp baking powder
✽ 100g ground almonds
✽ 100g skin-on almonds, chopped
✽ 1x 23cm round pie tray, greased
