Makes 10 servings
¼ cup olive oil
3 tablespoons butter
3 cloves garlic, peeled and crushed
2 white onions, peeled and sliced thin
2 yellow onions, peeled and sliced thin
2 Vidalia onions, peeled and sliced thin
2 Spanish onions, peeled and sliced thin
1 red onion, peeled and sliced thin
2 shallots, peeled and sliced thin
2 tablespoons chopped fresh sage
1 teaspoon salt
1½ teaspoons ground black pepper
2 quarts beef stock
3 tablespoons Worcestershire sauce
1 teaspoon red-pepper flakes
20 slices French baguette
1 (8-ounce) package Fontina cheese, sliced
