TWISTED ZUCCHINI SLICE

PREP + COOK TIME 1 HOUR 10 MINUTES (+ COOLING) MAKES 8

1 cup (220g) risoni
500g zucchini, grated (see notes)
½ teaspoon finely grated lemon rind
250g haloumi, grated coarsely
4 green onions, chopped finely
1 clove garlic, crushed
⅓ cup (25g) finely grated parmesan
2 tablespoons finely chopped flat–leaf parsley
4 eggs, beaten lightly
½ cup (75g) self–raising flour

Cook risoni in a saucepan of boiling salted water for 8 minutes or until just tender. Drain; cool.
