IT’S ELDERFLOWER TIME!

Gooseberry, mint and prosecco jellies

PREPARATION TIME 20 minutes COOKING TIME 10 minutes plus time to set SERVES 6

YOU WILL NEED

✔ 350g fresh (or frozen) gooseberries, plus extra to decorate ✔ 100g caster sugar ✔ 1 tbsp elderflower cordial ✔ 1.5 x 12g sachets of powdered gelatine ✔ 300ml Prosecco ✔ fresh mint sprigs, to decorate

DIRECTIONS

■ Top and tail the gooseberries, then put them in a saucepan with the caster sugar. Cover and cook over a gentle heat for 10 minutes, gently shaking the pan occasionally. Remove them from the heat and stir the elderflower cordial
