BREAKFAST: ZESTY SCRAMBLED EGGS WITH GREEN SAUCE
Jazz up your scrambled eggs with lemon zest, chilli flakes and heaps of fresh herbs.
SERVES 4 PREPARATION: 10 MIN COOKING: 10 MIN
GREEN SAUCE
1 ripe avocado
125ml (½c) plain yoghurt
juice of 1 lemon
salt
SCRAMBLED EGGS
8 eggs
grated zest of 1 lemon
2,5ml (½t) chilli flakes (optional)
15ml (1T) olive oil
15ml (1T) butter
handful fresh coriander, chopped
handful fresh parsley, chopped
salt
TO FINISH
4-8 slices of toast
cherry tomatoes
fresh herbs
1 Green sauce Put all the ingredients except the salt in the bowl of a food processor and pulse until smooth. Season with salt.
2 Scrambled eggs Beat the eggs with a fork. Add the lemon zest and chilli flakes (if using) and mix lightly.
