    Buttercake with Lemon Icing

    Serves 8, Prep and Cook: 1 hour, 15 mins

    2 00g unsalted butter, chopped, at room temperature
    ¾ cup caster sugar
    2 tsps vanilla extract
    3 eggs
    1¾ cups self-raising flour
    ¼ cup milk

    CANDIED LEMON RIND

    2 lemons
    ¹/ ³ cup caster sugar, plus
    2 tblsps extra

    LEMON ICING

    1½ cups icing sugar mixture
    1½ tblsps lemon juice

    Grease a 20cm round cake pan. Line base and side with baking paper, extending paper
